I've done such an awful job at keeping up with this livejournal...Things are just so busy now that I'm about to graduate. I have been posting pictures over on flickr though!

Carrot bundt cake!

3 cups all-purpose flour
2.5 cups sugar
1 tablespoon baking soda
1 tablespoon cinnamon
1 teaspoon salt
4 large eggs
1.5 cups oil
1 teaspoon vanilla extract
2 cups packed shredded carrots
2 cups chopped walnuts
1 cup apple sauce

1) Preheat oven to 325 degrees. Grease and flour bundt pan.
2) In large bowl with spoon, mix flour, sugar, baking soda, cinnamon, and salt.
3) In small bowl, with fork, beat eggs slightly; stir in oil and vanilla extract. Stir egg mixture, shredded carrots, walnuts, and apple sauce into flour mixture just until flour is moistened.
4) Spoon batter into pan, spreading evenly. Bake 1 hour 20 minutes or until toothpick inserted in center of cake comes out clean. Cool cake in pan on wire rack for 10 minutes.
5) With spatula, loosen cake and invert onto wire rack completely.
6) Drizzle cream cheese frosting (recipe follows) and sprinkle leftover walnuts on top.
7) EAAAAAAAAAAT.

Cream cheese frosting
12 oz. cream cheese
.5 cup butter (1 stick)
1 tablespoon lemon juice
1.5 teaspoons vanilla
5.5 cups confectioners' sugar

1) Beat cream cheese, butter, lemon juice, and vanilla together until smooth.
2) Gradually beat in confectioner's sugar until smooth.
3) Place bowl in microwave on high for at least 1 minute, let it get all runny, and then drizzle over cake.

Surin West
Today is parent-teacher conference day at school which means...well, no school! I don't see my dad very often, as he works long hours in a tiny, cramped office in a tall building in downtown Birmingham, Alabama. Knowing that I didn't have school today, to my delight, he invited me to meet him at an upscale Thai restaurant called Surin West that he visits during his lunch break every once in awhile. I've never tried Thai food and I'm always up for something new, so I eagerly accepted.

We meet around noon and were immediantly seated. About five minutes after our impersonable waitress took our drink order, she brought out a coconut soup.

It was so pungent, so flavorful. Now, truth be told, I haven't had much experience with many things coconut, so this was a real treat. There was obviously the strong taste of coconut milk, but mushroom, scallions, and little chunks of tofu floated around also that were quite lovely.

Very soon after the soup, our entrees arrived.
Thai noodle
I got the Thai noodle, which had pan-fried shrimp, chicken, egg, and noodles with crushed peanuts on top and a few matchstick carrots and bean sprouts on the side. My tummy was so happy after I ate THE WHOOOOOOOOLE THING.

My dad got the chicken masaman. I'm not sure what was in it, but I do know it had chicken (duh), some sort of spicy sauce, and avacodo.

What a great lunch. :)

So...I've been kind of ignoring this thing. I tried to start a blog, but failed horribly. I'm gonna start using this livejournal a lot more as a way to express my food geekiness, I swear! :P

I think I'll continue my little 'bio' from the first entry I made with what I put on my (former) blog:
I live in the deep south. Alabama isn't very known for it's wide variety of food, and that's something I'd like to break free of. Where I live, chicken is only eaten fried, a stick of butter is required if vegetables are involved, casseroles are a way of life, biscuits and gravy are their own food group, and cobblers rule the table. These comfort foods I've grown up with are wonderful, but I'd like to explore a little, you know? Sushi recieves wrinkled noses, ethnic foods are turned away, Trader Joe's and Whole Foods are unheard of, and those following vegan/vegetarian diets run the risk of being disowned.

In other news, tommorow I am going to be tasting Thai food for the first time in my life, and I'm so excited! (and I just caaaaan't hiiiiiide iiiiiiit...)

Hrm...what to put here. My name is Ashley (but you can call me Ash), I'm 17 years old, and have a passion for cooking. I hope to major in Food/Nutritional Sciences one day and maybe go to culinary school. I love to do anything that involves the kitchen, whether it be cooking dinner for my family or organizing the food in the cabinets or baking for anyone who will enjoy it.

I created this LJ in an attempt to squish all the LJ cooking communities that I visit often onto one friends list instead of trying to keep track of them all on my favorites list.
